We enjoyed a veggie salad at Lake Erie. This time I cheated a little. Once again I made my famous fresh chopped vegetable salad with olive oil, lemon juice and cider vinegar dressing. It was the perfect salad for staying cool up at Lake Erie. My sister in law made a cucumber salad was really delicious too. Always great to get your vegetables when you're enjoying the breezes at the beach! How to Beat the Heat

When temperatures soar into the mid 90's and the humidity feels so thick you can cut it with a knife, staying cool can be a real challenge. Maybe it is my imagination, but I think it has become harder to stay cool and beat the heat after I turned 50 years old. I've had heat problems in June, July and August in the past few years, so I try to be very aware of my body. Don't be embarrassed to stop if you feel you are getting overheated! Cucumber Tomato Quinoa Salad – Veggie Challenge

Cucumber Tomato Quinoa Salad is great when you're in the mood for a summer salad and perfect for the #VeggieChallenge! Directions: Cook one cup of quinoa in one and a half cups of boiling water. Stir quinoa frequently until water is absorbed. Take off heat and cover for 15 minutes. Fluff. Peel and remove seeds from the cucumber. Meeting new challenges zip lining in Utah

Taking on Some New Challenges

I consider a big part of Becoming Elli to be taking on new challenges. Some are physical, some are mental. Some, like the veggie challenge, are habits. As some of you know, I live in Summit County, Ohio, USA. By the name of it, you might think we are located on the top of a mountain, but in my county, the elevation peaks at just over 1,000 feet (325m) from sea level. So when I had the opportunity last weekend to visit Utah and do some outdoor activities, I figured the higher elevation of around 7,000 feet above sea level would give me some challenge. And it did! Kayaking: Trying a New Sport

Have you ever been invited to do something fun, but you hesitated and said "NO" -- Why did you say no? What's that about? Maybe because I'm getting older I find I feel like saying no because it's outside my comfort zone. I am trying to be more adventuresome and not say no to things. I want to continue to try new sports. Bean and Vegetable Reunion Salad This salad was made for the family reunion I attended on Saturday. Of course I made something for the veggie challenge. Although there are not any new vegetables in this salad, all the fresh vegetables are balanced with lots of protein with many types of beans. It makes the salad more colorful, too! Delicious, pretty and healthy! I made a whole lot of this salad and only about half of it was eaten. There were about 75 people there, so I expected to see more of it gone.
