It's been a little over halfway in April and, like Jill, I feel it's time to evaluate my first quarter results. First Quarter Healthy Eating From January to March I definitely have been eating better. How can I tell? My heart rate. The results on the scale. Tracking my food. Adding more veggies. Planning my meals. Healthy eating is always a goal, so I didn't make it one of my words or a resolution for 2021. Now I kinda wished I did so I could legit say I nailed it. Green Goodness Salad Dressing

You're going to like this Green Goodness Salad Dressing.  I recently reviewed the Wild About Greens cookbook by Nava Atlas and thought I would try to make something out of the cookbook. I chose to make the Green Goodness Salad Dressing. As you can see in the photograph, this dressing is a gorgeous green color. It's just lovely. Green Goodness Salad Dressing 1/2 cup extra virgin olive oil 2 good handfuls of baby spinach leaves 1/2 cup peeled seeded and chopped cucumber 1/2 cup firmly packed fresh parsley Two tablespoons lemon juice Two tablespoons white or red wine vinegar One tablespoon chopped fresh dill or one teaspoon dried dill Freshly ground pepper to taste Place all ingredients in the container of a food processor. A friend gave me Wild about Greens by Nava Atlas a while ago. I looked through this cookbook and thought "what a nice gift" but then never really did anything with it. I do enjoy reading cookbooks though I don't always feel compelled to actually make anything from them. Since we're doing the 2021 Veggie Challenge and I'm trying to introduce some vegetables into my diet that, while not necessarily new, are foods that I don't normally eat. When it comes to greens, I'm comfortable with a variety of lettuce, spinach, and kale. I struggle with some of the other greens but I'm feeling compelled to improve my greens repertoire. Food and Activity during the Ides of March

Mid-March is a fun time of year for me. The 15th is called the Ides of March (which is supposed to be a warning, but I don't heed it!) This past week has been very enjoyable. It feels like the beginning of spring and the end of winter. Lots of changes with the weather has brought cold sunshine or unexpectedly warm, windy days. A Variation on the Frittata

I decided to provide you with a variation on the frittata. Chris posted her pepper frittata recipe the other day and she motivated me to cook one for my lunch. I took the opportunity to capture my version of the frittata and thought I'd share it here. Because I used a pan that could go into the oven, I decided to go ahead and throw the frittata under the broiler. I didn't have to do that but it gave everything a nicely browned topping. One of the things I love about making a frittata is that you can save the leftovers and enjoy them the next day. It keeps and reheats well. In one of the recent podcasts I was thinking about my Frittata with Pepper Stir Fry breakfast when I said that I was cheating on the 2021 Veggie Challenge. We are all trying to add vegetables to our meals. The challenge for me is to eat more vegetables in my diet. The way I've been cheating is buying frozen vegetable packs and using them instead of cleaning, cutting and preparing fresh veggies. Quick and Easy Vegetable Ramen Soup

When I'm talking about quick and easy vegetable ramen soup, I don't mean the cheap packets of ramen I used to buy for a very cheap meal. Though I suppose you could certainly use those noodles to make this soup and they would work just as well. I don't know about those packets of seasonings though. They may be a bit suspect. Chicken Cucumber Olive Salad

I am loving my new creation of cucumber chicken salad! What is your favorite way to make Chicken Salad? I have found that I really like having chicken salad made with cucumbers, olives, a little celery and onions.. and just a bit of cheese. Sometimes I'll put in Parmesan cheese, other times feta cheese. I've also made this type of cucumber chicken salad by adding a lot of broccoli slaw, but I end up really dicing the broccoli slaw a lot so that it doesn't have a large ribbon of broccoli. I think it fits better with the bite size pieces. Spices I like are dill and parsley with a little bit of regular salt and pepper as well. This time I just used lemon juice and vinegar...

Tracking Food is Making Me Aware

There is no question that tracking food and water helps me to be more aware of what I'm eating. I notice that I consciously switch to a lower calorie choice or delay making a choice when I'm keeping track. Since I recently started keeping track of the amount of water I drink and tracking what I am eating I have noticed these changes: Snacks have been fruits - granny smith apples, bananas, frozen berries I'm choosing more lean chicken breast for the protein I prep food more often I go back and look at prior days to find out what works Putting together the grocery list seems easier, more purposeful Tracking gives me another routine to the day (which helps me to separate the days during the...
