I am loving my new creation of cucumber chicken salad! What is your favorite way to make Chicken Salad? I have found that I really like having chicken salad made with cucumbers, olives, a little celery and onions.. and just a bit of cheese. Sometimes I'll put in Parmesan cheese, other times feta cheese. I've also made this type of cucumber chicken salad by adding a lot of broccoli slaw, but I end up really dicing the broccoli slaw a lot so that it doesn't have a large ribbon of broccoli. Yes, I'm going to talk about falling on the ice. Ouch. Here in Ohio, we've been hit with winter weather for the past couple of weeks. I mean serious winter weather with snow and cold. The snow plows came through and cleared the roads but they didn't put any ice prevention down so the streets ended up being sheets of ice. Very slippery. Tracking Food is Making Me Aware

There is no question that tracking food and water helps me to be more aware of what I'm eating. I notice that I consciously switch to a lower calorie choice or delay making a choice when I'm keeping track. Yes, "everyone knows women can't do dips or pull-ups" is what I recently heard a young woman say. Young as in 28 years old. And who apparently goes to a bootcamp class somewhere. She complained that she can't do dips and said that of course she can't do pullups. Because, yes, you got it, "everyone knows women can't do dips or pulls." A few weeks ago, my three word commitment for 2021 bubbled out of my annual review of 2020. The prior year had been, in many respects dismal and disappointing, because of a boatload of challenges. I needed more resilience. As I mentioned in that post, I really was affected by so many mental challenges. Coming out of that post however, I selected my three words for 2021: activity, fit, strong. Funny how I didn't pick any words that primarily focus on mental resilience. I think I left that all in 2020 - when all of my words centered around attitude.
