I'm excited, eager, nervous and a little anxious to run in the Rite Aid Cleveland half marathon tomorrow. I've been training and cross training for this race ever since I signed up back in October, shortly after the Akron half marathon race. Eight months ago Jill and I ran the half marathon in Akron on a very hot day. It felt amazing to achieve such a huge undertaking. It was during the training for that race we become inspired to start Becoming Elli. As I write this, 24 hours before the start of the race, I'm full of Cleveland half marathon anticipation! Veggie Salad Lunch

I love a Veggie Salad Lunch and this makes an easy lunch filled with vitamins and fiber. All delicious and made up of fresh veggies. Cherry tomatoes Green pepper Green cabbage Cucumber Avocado Onion Celery Lemon Olive Oil Cider Vinegar Salt and Pepper Chop, dice, slice and cut up vegetables to similar size. You can add other things depending on what is in your kitchen! I used a larger knife to cut some of the vegetables because that little paring knife worked well for some things, not so well for others.  I cut just a little bit of cabbage and then diced it really small. Healthy Dishes to Bring to Potluck

Healthy Potluck Veggie Salad With the warmer weather, it is potluck season. My bike group likes to get together to ride after work and then have a potluck following. One challenge for me is what to bring to the potluck. Over the past few years, I've opted for a veggie salad minus the lettuce. Basically I chop, dice or grate the veggies. Instead of adding it to lettuce, I skip the lettuce and the veggies become the salad. We have several vegetarians who sometimes ride. The challenge becomes the protein. I like to add beans - either chick peas (garbanzo beans), kidney, or black beans for protein. (I rinse them first by running water over them and draining.) Raccoon Run Race 5K Recap

Last Sunday I ran the Raccoon Run and had a blast. It was an chilly - but sunny - morning at just over 33 degrees. It's always hard to know how to dress when the weather is cold but the sun is out. I figured lots of layers would be good. I ended up with four layers on top: compression shirt that wicks on the inner layer loose fitting sports cover up the tech shirt Raccoon Run 2018 from the event my hoodie sweatshirt (and I wore the hoodie up at the early miles to stop the wind!)
