Vegetables on Easter for the Veggie Challenge

While I love vegetables, I wasn't sure I wanted to try something very new for the Easter holiday. Loyal readers of the Becoming Elli website may recognize my tried and true Roasted Vegetables: Wash and slice vegetables Lightly coat with Olive Oil Roast in 400 degree oven for about 30 minutes Turn at least once Arrange on platter I also made my favorite potluck salad with lots of raw vegetables. I love how colorful this looks on the Easter buffet. Chop vegetables into similar sized pieces: Onion Zucchini Yellow Squash Sweet Peppers (red, yellow, orange) Celery Carrot Cauliflower Broccoli I added one can of Garbanzo Beans AKA Chick Peas for a little protein in the salad. Spring Running Events

Spring has sprung! It's getting warmer everyday here in Northeastern Ohio and I'm reminded that there are lots of spring running events and races. [caption id="attachment_2997" align="aligncenter" width="240"] Jill and I took a hike along Daffodil Trail with my dog, Lady.[/caption] Jill wrote about her adventures in the annual Hop for Hope 5K run. Later this month I will be working a water station at the 6 mile marker for the Cleveland 10 Miler and, depending on my ankle and the weather, I will hopefully be competing again in the Raccoon Run. Since I'm trying to do a new veggie each week, I'd be remiss not to talk about the Dirty Dozen and Clean Fifteen. Although this has been a thing for a while, I'm still trying to get on board. The "dirty dozen" and the "clean fifteen" are ways to deal with the about pesticides that are so difficult to wash off of the fruits and vegetables. These guidelines (which basically is just a list of foods) are a great place to know when to buy organic and when it is safe to buy regular. Spicy Cabbage in the Crockpot – Veggie Challenge

Today's Veggie Challenge recipe is an easy one! Add a little water to the bottom of the crock pot with two teaspoons of olive oil. Chop up two cabbages and place inside the crock pot. Sprinkle liberally with ground cayenne pepper. Put the lid on and cook on low for about 4 hours. Stir after a couple of hours if you are home. This makes a great side dish. Looking Forward to Spring Bike Riding

When spring rolls around I start thinking about riding my bike outside. For me, happiness is bike riding. It reminds me of when I was 10, 11 and 12 years old. Lots of good memories of riding bikes as transportation to go visit friends, using the construction site around the corner as my personal BMX course, and having freedom to go where I where ever my bike could take me. Just seeing the weather get a little more sunny and a little less cold has me thinking about bike riding. Heart Rate Training for Endurance

Since the beginning of the year, I've been experimenting with a lower heart rate training than I usually do in my workouts. I'm trying to improve endurance and stamina. Some people call it exercising in the "Fat Burn Zone." I'm not convinced that it is burning my fat, but I do know this: it has improved my endurance. It is much easy to keep going and I don't feel tired or worn out from exercising. The idea is to work out at the level of exertion where your heart rate stays at the aerobic level. On my FitBit, it is called the fat burning level. If you exercise just a little harder, you begin to breathe harder, your heart pumps harder and you'll enter the cardio level. Really...

Collard Greens Rainbow Wrap – New Veggie Challenge

Last week I took a grocery store tour with Revitalize, a functional group that focuses on women's health. Today's recipe is from Beth Kaczmar who told me it was okay to "cheat" and use her photo of her Collard Greens Rainbow Wrap. It looks delicious, doesn't it? This is a photo of the photo on her phone!
