between salad and soup

Between Salads and Soups

I'm feeling that time of year, between salads and soups. Most people call it the equinox, when the days and the nights are about the same length. Here in the states we are moving from winter into spring. I know we have some readers and listeners who will be moving from summer into autumn, like Sue Loncaric who publishes on Living Well After 50. Jill and I interviewed her in 2021 for the Fit Strong Women Over 50 podcast. Between Salads and Soups I find that most of my vegetables end up in salads or soups, or sometimes both. I especially like soups with roasted vegetables but find that I'm adding roasted vegetables to some of my salads as well. Roasted red peppers are incredibly sweet. I also find...

Adjusting soup on the fly

Adjusting soup on the fly

What do I mean by adjusting soup on the fly? Good question. I made a pot of vegetarian chili in the Instant Pot the other day and had it for dinner. It was not my best attempt at soup or chili. I think I put too much broth in. It was not as thick as I expect chili to be. Maybe it was because I didn’t add any meat but I’m pretty sure I’ve made vegetarian chili before and it was fine. I ate a bowl of the chili and stuck the remainders in the refrigerator. Then the next day I made a pot roast for a family dinner. I made it in the Instant Pot as well. Basically the pot roast consisted of chuck roast (beef), potatoes...

Spicing Up Bland Vegetable Soup

Spicing Up My Bland Vegetable Soup

I made a pot of vegetable soup the other day using my Instant Pot. My son and daughter-in-law were coming to visit and I wanted to have soup since it was one of the first cooler days of fall. I was rushed and just sort of threw the soup together. It wasn't bad but it was rather bland. It definitely needed some spicing up. Here's how I made the soup. I used: Onions Carrots Celery Cabbage Potatoes Chicken Can of diced tomatoes Chicken broth Because I was rushed, I didn't sauté any of the vegetables before adding the other ingredients. I decided it didn't really matter.  The Instant Pot was full, almost overly so. I cooked the soup and served it up right away when my guests...

Creamy Vegetable Soup in the Instant Pot

Creamy Vegetable Soup in the Instant Pot

I came up with my version of creamy vegetable soup in the Instant Pot. I was out of town unexpectedly recently and left with a refrigerator full of vegetables. When I got back, I realized that I needed to use some of the produce quickly or I was going to have to throw it out. It was more than I could eat in one sitting so I tried to come up with a creative solution. We've shared a variety of vegetable recipes on this site. Chris shared a recipe for vegetable soup. I didn't have enough variety of veggies to make her recipe so had to come up with something different. Creamy Vegetable Soup in the Instant Pot Here’s the recipe I created. I used the Instant Pot for...

Cabbage, Potato, and Sausage soup

Cabbage, Potato, and Sausage Soup in the Instant Pot

It's fall once again and my heart turns to soups, including my recipe for a Cabbage, Potato, and Sausage Soup and I'm using the Instant Pot for this. If you don't have an Instant Pot, you can make this just as easily on the stove. I wanted to see how the cabbage and potato would work in the Instant Pot and it turned out great. In all of the recipes in Becoming Elli, you can count on there being a lot of recipes that include cabbage. I'm not sure why that is. I posted my basic cabbage soup recipe a while ago. Ingredients 1/2 Tbsp. avocado oil 2 carrots, chopped 2 stalks of celery, chopped About 1 lb of baby red potatoes, cut in half or quarters depending on the size 1/2 of...

cabbage soup

Cabbage Soup is Lunch of Choice

I am having cabbage soup for lunch today. I made a large batch of soup a few weeks ago and put some containers of it in the freezer to save for later. Today is a cold, snowy day here in Ohio and I’m working from home. I was daydreaming about what I was going to eat for lunch and decided to get a container of soup out of the freezer. Customizing the Soup The best thing about this soup is that I can add to it. When I made this soup originally, I added some cooked chicken and beans to the soup. Today I decided to use up the chopped butternut squash that was in my refrigerator so I chopped it into smaller pieces, coated it with some...
