Sauted Veggies over Kale and Spinach – Veggie Challenge

Sunday lunch: Lightly sautéd the veggies to put on top of my chopped spinach and kale greens. Added olive oil, apple cider vinegar and lemon juice for dressing. Salt/pepper.

Not so sure this is a new recipe, but it sure tasted great to me. #VeggieChallenge
