It started out that I was making an omelet for my husband and myself, but after I had all these veggies in the pan, I switched it up to a veggie fritta. It was too big to try to flip!
The only real difference is you don’t flip it. You cook the fritta from the bottom and the top – Usually by putting it into the oven to brown the veggies and the top.
Cheese is usually in these omelets or fritta, but we were out and honestly, I don’t think either of us missed it. This was filled with peppers, onions, broccoli, tomato, celery, mushrooms and spinach – nothing extremely “new” – but I’m still going to call it my #veggiechallenge for the week!
