Breakfast Smoothie Recipe Veggie Challenge

I’ve been making a breakfast smoothie frequently for the past few months. I seem to go in cycles on smoothies. At times, they’re great and I enjoy having them. They satisfy me until lunch time and I have control over what I eat.

Because I add the frozen berries and the pomegranate juice, this smoothie is not green. It can turn a pinkish color, though sometimes it’s not an appetizing color. If that happens, serve it in a mug.

Here’s the recipe of what I’ve been doing lately. You can easily switch out the vegetables and fruit. Just use what you have on hand.

Breakfast Smoothie Ingredients

2 handfuls kale

1 chunk cucumber, skin  removed unless organic

1 carrot

1/2 avocado, peeled and seeded

2 to 3 handfuls frozen berries

1/4 cup pomegranate juice

1 cup almond milk

1 serving Orgain Organic Protein Powder, Vanilla Bean flavor

Throw all of the ingredients into a strong blender and blend. Follow your blender’s directions for the best order to put the ingredients.

This makes one generous serving or two moderate servings.

Notes

  • You can use whatever vegetables you have on hand though be careful if you use a vegetable with a strong flavor. For example, I find the taste of celery to be too distinctive to use in a smoothie.
  • If you don’t have any avocado, use some other source of fat. That might be a tablespoon of coconut oil or almond butter. Having the fat in the smoothie helps this feel like a complete meal.
  • You don’t have to use any juice in this. Besides the pomegranate juice, I love adding cranberry to the smoothie. I buy Just Cranberry. It’s made solely of cranberries. No other juices or sweeteners. It’s quite tart.
  • Adding some green or herbal tea, preferably room temperature or chilled, works well as a liquid.
  • I don’t add banana to this because the vanilla protein powder makes this sweet enough. If I wasn’t using the powder, I’d consider adding a banana for sweetness.
  • The frozen berries work well in the smoothie because they keep the drink cold. Of course, you can use fresh berries. Also, sometimes I use only blueberries or raspberries or strawberries. What you have on hand is the best choice.

Cooking with Cruciferous Crunch Collection

I picked up this bag of Cruciferous Crunch at Trader Joe’s this week. It’s made up of shredded and chopped kale, broccoli, Brussels sprouts, green cabbage, and red cabbage. Trader Joe’s did all of the work of shredding the vegetables. Other stores are probably now carrying a similar product but if you have to, you could always make your own crunch collection. This was an impulse buy and it worked out well for me.

I basically decided to make some kind of salad or slaw with this. I think you could add to these ingredients or change them without problem.  If I had some dried cranberries or dried cherries in the house, I would have added them to the salad too.  Slivered almonds or pignon nuts would have worked in place of the chopped cashews.  I think you could also swap out the almond butter with tahini. I think peanut butter might be a bit too strong a flavor but if you try it, let me know.

Ingredients

1 bag of Trader Joe’s Cruciferous Crunch Collection or several cups of chopped kale, broccoli, Brussels sprouts, green cabbage and red cabbage

Dressing:

  • 1/4 cup of almond butter
  • Juice of 2 limes
  • 2 Tbs apple cider vinegar
  • 1 Tbs. dijon mustard
  • 1/2 tsp salt
  • 1 tsp garlic powder

Garnish:

  • chopped cashews (optional)
  • dried cranberries (optional)

Directions:

Mix the ingredients for the salad dressing in a small jar and mix well. Make sure the almond butter is well blended with the other ingredients.

Empty the bag of vegetables into a large bowl and then pour the dressing over. Stir the salad well.

Serve immediately or cover and put in the refrigerator. It tastes better if allowed to sit for a while. I’ve kept this up to three days and it’s been fine. It might have lasted longer but it was eaten before I could determine its end date.

When you  serve the salad, add some chopped cashews and/or dried cranberries on top. The nuts will go soggy if mixed into the salad early, so wait and add them immediately before eating.
